Let's see how to cancel an order that has been picked but not yet packed. Let's go to Dispatch and open the Orders Requiring Shipping screen.

Click on "Despatch"

Find and select the order to be cancelled

Click on the order to select

Once highlighted we cancel the despatch

Click on "Cancel Despatch"

Click on "Yes"
Step #5: Click on "Yes"

This sends it back to the orders requiring picking screen. Let's double-check to make sure we can find it.
